These almond butter and oat cookies are delicious + healthy, great for breakfast or a snack. They’re lightly sweetened and on the dense/hearty side. Kind of like a granola bar in cookie form.
This colorful salad is a delicious light-but-satisfying meal. It’s full of crispy, fresh vegetables, protein-filled edamame and pumpkin seeds, and is topped with a tangy, slightly sweet Asian dressing.
I like this Cowboy Caviar recipe so much I make it year-round. Including now, with snow coming down. It’s fresh and flavorful and a great item to have in the fridge for a quick healthy snack. I like it with tortilla chips but it also goes excellently as part of a burrito bowl meal with rice, cheese, guacamole, and hot sauce. Or you could put in in a wrap with rice, cheese, guacamole, and hot sauce for a regular burrito. It’s kind of like I enjoy different combinations of these same ingredients..
I started making this tofu stir fry on our car camping trips because it’s easy to prep most of the steps at home and spend only ~20 minutes cooking a fresh, healthy dinner. Tofu is great for car camping because I don’t have the same level of concern about food spoilage as I would if it were chicken. And browning it on all sides in a cast-iron skillet gives it an awesome texture – crispy on the outside, soft/chewy on the inside.
These vegetarian black bean tacos are fresh and filling, a great choice for car camping or for a weeknight dinner. Customize them with whatever toppings you like!
These banana chocolate chip pancakes are fluffy on the inside, slightly crisp around the edges. A perfect treat for your next lazy morning!
Chewy lentils and farro, crunchy vegetables, and greens coated in a bright lemon-tahini dressing make for a filling, healthy salad.
These are my current favorite cookie – crispy on the edges, chewy in the middle, sweet and slightly spicy from the ginger.
This carrot cake oatmeal recipe is a healthy, filling, flavorful breakfast that saves really well – perfect to make a large batch on the weekend and take to work throughout the week. Just heat up with an extra splash of milk stirred in and add your favorite toppings.
Making food and then demolishing the kitchen that allows you to make food. Good-bye blue laminate counter tops!
