Healthy Almond Butter Oat Cookies
These almond butter and oat cookies are delicious + healthy, great for breakfast or a snack. They’re lightly sweetened and on the dense/hearty side. Kind of like a granola bar in cookie form.

Ingredients
  • 1cup oat flourI grind rolled oats in a food processor
  • 1/2cup almond mealor grind whole almonds in a food processor or blender
  • 1/2 cup flaxmeal
  • 1tsp cinnamon
  • 1/4tsp Salt
  • 1tsp Baking powder
  • 5tbsp Maple syrupor use brown sugar
  • 1/4cup coconut oil, heated until liquidor canola oil
  • 6tbsp creamy almond butter
  • 1tsp Vanilla extract
  • 3-4tbsp Chocolate chips
  • 1/4cup chopped walnutsor pecans
Instructions
  1. Heat oven to 350 degrees F. Or 360 degrees F if you’re at altitude.
  2. In a large bowl, combine all of the dry ingredients – oats through baking powder.
  3. In a smaller bowl, whisk together wet ingredients – maple syrup through vanilla extract. You may need to heat the coconut oil in the microwave until it is liquid.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips and nuts.
  6. Roll the dough into golf ball sized cookies and place on a parchment paper or silicon mat-lined baking sheet. Flatten balls slightly with your hand.
  7. Bake 13-15 minutes, until the cookies are slightly browned on top. They may be soft in the center but once cooled they will firm up.
  8. Let cool for 5 minutes on the baking sheet and then transfer to a wire cooling rack.
  9. Stores well in an airtight container for 5-7 days. You can also freeze them to keep for longer.
