WIAW – What I Ate Wednesday
I started off the morning with ginger tea and then a delicious Pumpkin Microwave Muffin. Look at the little piles of things:
Then it becomes this brown colored masterpiece:
As I do with most things I eat, I put peanut butter and chopped walnuts on top.
I stopped drinking coffee this week, so I had a few cups of Irish Breakfast tea and pretended like it was the same. I don’t think it’s permanent, but I realized when I NEEDED a fourth cup of coffee I should dial it back if I wanted to keep all of my teeth past my 35th birthday.
I didn’t have to go into work until the afternoon so I enjoyed a 6 mile trail run with a friend at North Table Mountain Park. Here is the loop:
Lots of options there for loops, with great views of Denver and Golden. Kind of like every run in or near Golden.
Then for lunch I ate fish tacos because I always do.
I went to work in the afternoon and ate this Pumpkin Bar for a snack.
For dinner I had a delicious slow cooker vegan chili with some tortilla chips.
I got home at 1 AM and was trying to remember on the drive home how I ever stayed up til 3 AM in college. Then I remembered that I slept until 11 AM. I would not go to an 8 AM class because it was too early. Hah!
The night nurses I talk to say they get 3-4 hours of sleep on average. I don’t understand it. I feel like the inability to live on little sleep is a character flaw or something, or at least that’s how I perceive their judgement when I say I’m tired.
